A bittersweet Italian amaro made from 13 herbs and plants, but predominantly artichoke (Cynara Scolymus). Drunk as an aperitif and digestif, it has an ABV of 16.5%.
0.75 oz
'Point and a half' this Italian bittersweet vermouth (chinato vermouth) dates to around 1867 and is simultaneously amongst the bitterest and sweetest of vermouths. It can be used as a substitute for rosso (Italian red) vermouths in most cases, but can also be thought of as an intersting sub for dry vermouth.
15 drop
The most common fruit juice used in cocktails. This citrus juice is about 6% acid; pure citric acid. Lemon juice should be used the day it is squeezed, some like it freshly squeezed and others like it a few hours old.
6 dash
A bitters made from Seville oranges, cardamom, caraway seed, coriander and burnt sugar.
2 pinch
Often used to rim a glass for cocktails or made into a solution to add to the liguid itself in order to balance the flavors. Table salt or common salt is a mineral composed primarily of sodium chloride (NaCl), a chemical compound belonging to the larger class of salts; salt in its natural form as a crystalline mineral is known as rock salt or halite.
5 peel
A yellow citrus fruit. The peel is often used as a garnish while the juice incorporated into the drink for a tart flavor profile (citric acid).
1 twist
A yellow citrus fruit. The peel is often used as a garnish while the juice incorporated into the drink for a tart flavor profile (citric acid).

Start with one ‘bakers’ pinch of salt in a rocks glass. Add the Cynar and stir a few times. Add the Punt e Mes, bitters, lemon juice and ice. Stir briefly. Taste, looking for only the faintest hint of salt. If the drink tastes salty, throw out your first attempt (or just drown it) and adjust the salt level. When the salt level is correct, express the oil from 5 lemon peels over the drink. Drop one in to garnish on the side of the glass; skin down. Add a 1/8 rim of salt to allow experimentation with a few salty sips. Making the proceeding sips pleasantly sweet. Which will make the brain hurt. #build #ontherocks
