Martini 1912

1 oz
Slightly sweeter than London Dry gin, but dryer than genever, this 'missing link' gin may or may not be the inspiration for the Tom Collins.
1 oz
Also refered to as French vermouth, these are (usually) colorless vermouths that have not been sweetened, containing less than 4% sugar.
1 dash
A distilled, highly alcoholic (45-75% ABV), anise-flavored beverage derived from botanicals like wormwood, green anise, fennel, hyssop, melissa and other herbs. Technically a spirit, as it is not bottled with sugar. The green fairy.
2 dash
Gum syrup, is a 2:1 sugar:water (by mass) syrup with added gum arabic, commonly used in cocktails. The gum arabic prevents the high sugar syrup from crystallizing and also gives a silky mouthfeel to the cocktail.
1 twist
A yellow citrus fruit. The peel is often used as a garnish while the juice incorporated into the drink for a tart flavor profile (citric acid).

Stir all with ice and strain into a chilled cocktail glass. Garnish with a lemon twist. #stir #straight

The original recipe didn’t specify vermouth type, but we use dry here.
