A non-alcoholic acidulated drink made with vinegar and commonly used in 'soft cocktails' but growing in popularity across the cocktail spectrum. You can make this yourself, there are an endless number of recipes online.

Water into which carbon dioxide gas under pressure has been dissolved, creating a fizzy texture. We treat soda water, club soda, seltzer and sparkling water the same.
Shake first two ingredients vigorously with plenty of ice. Strain into a highball glass filled with ice and top with soda. #shake #ontherocks
To make the shrub: combine 1 cup apple cider vinegar, 1 cup sugar, .75 cup pineapple (sliced), .75 cup ginger (sliced). Allow to simmer for 10-15 min. Cool and puree until smooth.
